The Makers
The shoyu we carry is brewed at a house founded in 1688. We work directly with makers who focus on quiet, precise flavor, not mass volume.
NIHON NO GOHAN was founded in December 2023 to bring this level of seasoning to cooks outside Japan. We select a very small number of products and stand behind each one.
Why We Keep It Small
We do not chase variety. We focus on a narrow range of seasonings that belong in serious kitchens. Each product must earn its place by how it performs in cooking.
We listen first to the people who cook with our products every day. Their feedback shapes what we keep, what we adjust, and what we decide not to carry.
We do not publish names or numbers. Quiet, steady use in the kitchen matters more to us than public praise.
When we choose a maker, we look for patience, restraint, and a clear idea of what their seasoning should do on the plate.
We keep our line small so we can answer detailed questions about how each product behaves in stock, sauces, and finishing.
If you are a cook, we want you to know exactly what to expect when you reach for our soy sauce or yuzu ponzu.
We are careful about where our products appear. They belong in places where time and attention are given to seasoning.
