Made by Shibanuma Soy Sauce in Tsuchiura, Ibaraki, Japan — a family brewery founded in 1688 that has made soy sauce on the same site, under the same family, ever since. In the Edo and Meiji periods Tsuchiura was named alongside Noda and Choshi as one of the three great soy sauce towns of the Kanto region. The soy sauce in this bottle is dark shoyu, brewed and fermented rather than chemically hydrolyzed, made with non-GMO soybeans.

This is a reduced-sodium blend: brewed soy sauce (about 61%) with water, so the salt comes down while the flavor holds. Salt is 9.1 g per 100 ml — about 1.4 g of salt, roughly 540 mg of sodium, per tablespoon. Use it the way you already use soy sauce — on rice, in marinades, for simmering, or at the table.
