Reduced Sodium. Brewed in Ibaraki Since 1688. A Case That Lasts.
Made by Shibanuma Soy Sauce in Tsuchiura, Ibaraki, Japan — a family brewery founded in 1688 that has made soy sauce on the same site, under the same family, for over 330 years. In the Edo and Meiji periods Tsuchiura was named alongside Noda and Choshi as one of the three great soy sauce towns of the Kanto region. The soy sauce in these bottles is koikuchi (dark) shoyu, brewed and fermented rather than chemically hydrolyzed, made with non-GMO soybeans.
This is a reduced-sodium blend: brewed soy sauce (about 61%) with water, so the salt comes down while the flavor holds. Salt is 9.1 g per 100 ml — about 1.4 g of salt, roughly 540 mg of sodium, per tablespoon. The case includes 24 bottles (500ml / 16.9 fl oz each), so you always have one on hand — whether you cook every day or stock a restaurant kitchen. Full ingredient list, additives included, is under Ingredients & Allergens below. 540-day shelf life. Made in Japan.
A note on transparency This soy sauce contains a small amount of monosodium glutamate (MSG), which helps us keep that rich umami flavor while lowering sodium. The FDA classifies added MSG as Generally Recognized As Safe (GRAS). Contains soy and wheat.
Ways to use it
As a finishing sauce over grilled fish, meat, or vegetables
For classic Japanese home cooking — simmered dishes, marinades, dipping sauce
A splash over rice with a fresh egg (tamago kake gohan)
